Temporarily Modifying the Composition of Ingredients in Formula

The user should be in the Formula Development section of the TechWizard Online™ and already have a formula entered. In most cases it is best to modify the composition of an ingredient in its ingredient file. However, it is possible to temporarily modify the composition of a particular ingredient in a formula. Note – this composition information will be overwritten if you update composition from the ingredient file.

Click View button and click Composition.

The composition of each ingredient appears in blue cells. Modify the composition as needed. Note – the changes do not affect the composition of an ingredient in the ingredient file. Any changed composition values will revert to what is in the ingredient file if the formula is retrieved and the ingredient composition is updated.

Temporarily Modifying Ingredient Composition for Day-to-Day Batching

The user should be in the Formula Development section of the TechWizard Online™ and already have a formula entered. In most cases, it is best to modify the composition of an ingredient in its ingredient file. However, it is possible to modify the composition of a particular ingredient in a formula.

The Ingredient Composition Adjuster allows you to modify all the ingredient properties for an ingredient based on the total solids content, fat content, fat and total solids, or fat and the typical composition of skim milk. These changes are temporary and can be very helpful if you need to update ingredients and create a recipe for day-to-day batching. An example would be making an ice cream mix from raw ingredients that vary in fat, total solids, protein, etc.

To use this feature, you need to be in the Formula Development Section and have a formula set up.
Click the Formula button and select Ingredient Composition Adjuster.

The Modify Formula Ingredient Composition Window appears.

Select the ingredient you wish to modify from the dropdown (A).
Select the tab corresponding to what you wish to modify (B).
Enter the desired composition in the space(s) provided (C).
Press the Calculate button (D).
Press the Update Composition button (E) to update the ingredient in the Composition portion of the Formula Development section with the Modified Composition values shown (F).
In this example we are updating the fat content of cream from 40 to 42% fat. All other values in the formula are adjusted accordingly.

Temporarily Modifying Ingredient Price in a Formula

The price of an ingredient can be modified in a particular formula or in an ingredient file. If you wish the change in price to influence all formulas containing an ingredient, then modify the price in the ingredient file. If you want to change an ingredient price temporarily in a single formula then you may modify the price in the formula.

The following procedures work when modifying prices in the Formula Development section. Note that these changes affect this formula only.

The necessary ingredients should already be in the formula before setting prices. Click the Edit Price button or click the Formula button and select the Ingredients dropdown and click Edit Price.

The Edit Ingredient Price In Formula window appears.

Select the ingredient to view or edit from the drop-down box (A). The current price per pound and price per Kilogram are shown (B).

Enter the price (C) and the corresponding amount (D) and units (E). If the selected unit is a volume, then select the appropriate means of calculating density (F) so the price per weight can be determined.

Press the Calculate button (G). The calculated prices are shown (H).

Press the Update Price in Formula button (I) to modify the ingredient price with the information provided. To have the price update after pressing the Calculate button, click the check box (J)

Close the form when finished editing ingredient prices. Save the formula if you want to keep your changes. Note that these changes affect this formula only.
